Herbed Alfredo Potatoes and Porcini Mushrooms

Potato slices are layered with porcini mushrooms; creamy Alfredo sauce and Parmesan cheese, and baked till golden brown.
 

Ingredients

  • 6 tbsp butter
  • 1 tbsp fresh rosemary leaves, chopped
  • 1 large clove fresh garlic, peeled and minced
  • 1 16 oz jar creamy Alfredo sauce
  • 1/2 cup chicken broth or milk
  • 8 cups white potatoes, peeled and sliced 1/4 inch thick
  • 8 ounces porcini mushrooms, coarsely chopped
  • 2/3 cup fresh grated Parmesan cheese
 
Method

In small saucepan over medium low heat, melt butter, then add rosemary and garlic. Cook over medium heat until garlic is light golden brown and set aside. In a large measuring cup or a medium sized mixing bowl combine Alfredo sauce with chicken broth or milk and butter mixture in sauce pan; stir to blend. Butter a 13 x 9 x 2 inch baking dish or spray dish with a nonstick cooking spray. Preheat oven to 400 degrees. Place half the potatoes in a layer in baking dish. Sprinkle half the mushrooms over potatoes. Evenly pour one half Alfredo mixture over potatoes and mushrooms in baking dish. Repeat layers, using all ingredients. Sprinkle top of casserole evenly with Parmesan cheese. Cover baking dish with aluminum foil and bake at 400 degrees for 40 minutes. Remove foil and continue baking 15 minutes longer. Serve hot.

 

Notes: This is a good dish to take to a potluck.
