Herbed Lobster in Rolls

Lobster meat is blended in the food processor with cream cheese, mayonnaise, parsley, Worcestershire, and lemon juice, and then spooned into hard rolls.
Ingredients
- 1 pound lobster meat
- 8 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 1 cup coarsely chopped parsley leaves
- 1 tsp. Worcestershire sauce
- 2 tsp. lemon juice
- Salt and pepper (to taste)
- 4 long, hard rolls (5-6 oz. each)

Method
Pick over the lobster meat to remove any membrane or shell; place meat in a medium bowl. In the bowl of a food processor, combine the cream cheese, mayonnaise, parsley, Worcestershire sauce, lemon juice, salt, and pepper. Puree the mixture and taste for seasoning. Add the cream cheese mixture to the lobster; stir to combine. Split the rolls lengthwise, leaving one long side attached; spoon in the lobster filling. Enjoy right away or wrap securely in plastic wrap, then in foil to pack for a picnic.
Notes: I use low-fat mayonnaise.
