Herbed-Stuffed Tomatoes

Tomato halves are sprinkled with a mixture of bread crumbs, parmesan and melted butter, flavored with garlic, shallots, and parsley, then baked and broiled.
Ingredients
- 4 large tomatoes, cut crosswise in half and seeds removed
- 1/4 tsp. salt
- 2 small shallots, minced
- 2 cloves garlic, minced
- 3 Tbsp. unsalted butter, melted
- 2 Tbsp. parsley, chopped
- 3/4 cup seasoned fine dry bread crumbs
- 2 Tbs. grated Parmesan cheese
- 1/4 tsp. pepper

Method
Preheat oven to 350 degrees. Sprinkle insides of tomatoes with the salt. Set aside to drain on paper towels for 15-20 minutes. Combine remaining ingredients, except pepper, in a bowl. Spoon breadcrumb-cheese mixture onto each tomato half. Sprinkle with pepper and bake 10 minutes. Turn on broiler. Broil tomatoes 30 seconds to 1 minute until lightly browned.
