High Off the Hog Waldorf Salad

This recipe works well as a light dinner or lunch. The crunchy bacon combines perfectly with the apple, cranberries and walnuts.
Ingredients
- 6 strips bacon
- 1/2 cup fat free vanilla yogurt
- 2 tbsp lemon juice
- 2 tbsp light mayonnaise
- 1/4 tsp black pepper
- 1/4 tsp salt
- 2 tbsp fresh leaf parsley, minced
- 2 large Gala or Honeycrisp salad apples, cored and diced
- 2 ribs celery, trimmed of leaves and cut into 1/2 inch pieces
- 1/4 cup dried cranberries
- 1/2 cup chopped walnuts
- 4 cups butterhead type lettuce, washed and leaves torn

Method
Fry bacon in a large heavy skillet. Mix yogurt, lemon juice, mayonnaise, pepper, salt and parsley in a large bowl then whisk to blend well. Once bacon is brown and crisp, move to paper towels to drain. Place prepared apples, celery, cranberries and walnuts in a bowl and stir to blend. Arrange lettuce evenly on 4 plates. Spoon salad onto plates. Crumble bacon and sprinkle evenly over salad.
