Holiday Flying Saucers

Make these easy open-face sandwiches for a quick lunch. Just top toasted waffles with a cranberry-mustard mixture, turkey, and provolone cheese and bake.
Ingredients
- 4 large round frozen waffles, toasted
- 1 tablespoon Dijon-style mustard
- 1 1/3 cups whole berry cranberry sauce
- 4 slices cooked turkey
- 4 slices provolone cheese

Preheat oven to 375 degrees. Arrange toasted waffles on baking sheet. In small bowl combine Dijon with cranberry sauce. Evenly spoon over waffles. Top with turkey and cheese. Bake 12 to 15 minutes until cheese begins to brown.
Notes: This is a great little sandwich anytime of the year, but especially convenient during the holidays with leftover turkey and cranberry sauce.
