Honey Ham and Yam Pockets

These pita pockets are stuffed with ham and cheese and served with a chutney of yams, dried cranberries, maple syrup and grated apples.
 

Ingredients

  • 2 tbsp. unsalted butter
  • 1 sweet onion, finely chopped
  • 1 green apple, peeled and grated
  • 1 tbsp. chopped crystallized ginger
  • 1 tsp. ground coriander
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. cayenne pepper
  • 1 tsp. salt
  • 1/3 cup dried cranberries
  • 2 tbsp. pure maple syrup
  • 1 can (15-oz.) sweet potatoes, drained and mashed
  • 3 pita bread pockets, split
  • 1 lb. cooked ham, thinly sliced
  • 1/4 lb. baby Swiss cheese, thinly sliced
  • 36 fresh green beans, trimmed and blanched

Method

For yam chutney, melt butter in a large saucepan. Cook and stir onion, apple, ginger, coriander, cinnamon, and cayenne pepper in hot butter for 4 minutes. Stir in salt, cranberries, syrup, and mashed sweet potatoes; heat through. Preheat oven to 350 degrees. Spread a generous portion of yam chutney inside each pita pocket. Divide ham and cheese among each pocket. Place 6 green beans in each pocket. Place pockets on a baking sheet. Bake about 7 minutes or until heated through. Serve with remaining yam chutney.

 

Notes: Creamy spicy yam chutney is a good accompaniment to smoked ham and Swiss cheese. The green beans give this sandwich a nice crunch.
