Thin strips of sauteed chicken, seasoned with a savory rub and a sauce made of honey, lime and chipotle chilies.
Preparing sauce:
In sauce pan combine the juice of 2-3 limes, zest of 1 lime, chicken broth, honey and chopped up chipotle chile to taste. Cook until sauce has thickened to a nice thick consistency.
Preparing chicken:
Cut breasts thin, about 1/4-1/2 inch thick.
Mix spices together and rub on both sides. Use olive oil to pan fry in skillet, making sure pan is hot to sear each side of chicken to seal in juices. Cook for about 1-2 minutes per side, then brush sauce over each side and cook for another minute per side or until done. Garnish with lime and cilantro.
