Hot Dill Potato Salad

Hot cooked potato cubes are combined with a flour-thickened milk and mayonnaise mixture flavored with onion and dillweed.
 

Ingredients

  • 1 Tbl butter or margarine
  • 1 Tbl all-purpose flour
  • 1/4 teaspoon dried dillweed
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 cup milk
  • 1/2 cup mayonnaise
  • 2 Tlb finely chopped onion
  • 5 medium potatoes, cooked, peeled, and cubed (5 cups)
  • Paprika (optional)

Method

Melt butter or margarine over low heat. Stir in flour, dillweed, salt, and pepper. Add milk all at once. Cook and stir till mixture thickens and bubbles. Blend in mayonnaise and onion; fold into hot potatoes. Spoon into serving dish; sprinkle with paprika. Garnish with parsley, if desired.

 

Notes: This salad is best when served warm, but can be eaten cold.
