Hot German Rice Salad

A tangy, warm rice salad with smoky bacon and boiled eggs with a zesty vinaigrette.
 

Ingredients

  • 1 cup uncooked long-grain rice
  • 8 slices bacon
  • 1/3 cup sugar
  • 1/3 cup vinegar
  • 2 Tbl water
  • 2 Tbl chopped green pepper
  • 1 Tbl chopped onion
  • 1/2 tsp celery seed
  • 1/2 tsp salt
  • 3 chopped hard boiled eggs
 
Method

Cook rice according to package directions. Cook bacon till crisp; drain and crumble. In saucepan, combine 1/4 cup of the bacon drippings, cooked rice, sugar, vinegar, water, green pepper, onion, celery seed, and salt. Cook and stir till liquid is absorbed. Add bacon and eggs; toss.
