Inside Out Bacon Cheeseburger Meatballs

Extra large Italian style meatballs stuffed with bacon and Cheddar cheese--serve as a hearty appetizer or on a bun for meatball sliders.
 

Ingredients

  • 2 lbs meatloaf mix; beef, veal or pork
  • 2 large onions, chopped
  • 8 cloves garlic, chopped
  • 2 large eggs
  • 2/3 cup Italian seasoned bread crumbs
  • 1 tbsp Worcestershire sauce
  • 1/3 cup freshley grated Parmesan cheese
  • 3 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped fresh oregano
  • Pinch crushed red peppers
  • Kosher salt and fresh ground pepper to taste
  • 32 packaged Cheddar cheese cubes
  • 8 slices bacon, cooked through but not so crispy that it will fall apart during rolling
  • 3 tbsp extra virgin olive oil
  • Burger condiments for dipping, ketchup, mustard, mayonnaise or barbeque sauce

Method

Combine first 12 ingredients in a large mixing bowl just until incorporated, but do not over handle meat. With hands, divide meat into 4 sections, then quarter, and form into 4 meatballs. These are larger than typical meatballs because they are stuffed and you don't want the cheese to leak out. Wrap bacon around two cheese cubes. Place meatball in palm d and press down, then place bacon wrapped cheese in the middle, and wrap meat around it. Give it a couple of rolls, and pats with hand, to make sure bacon and cheese is fully covered. Preheat oven to 400 degrees. Grease a large cookie sheet with 2 tbsp olive oil. Place meatballs on a cookie sheet rolling around to ensure they're covered with oil. Cook meatballs in 2 batches so not to overcrowd pan. Use reserved tbsp of olive oil to add to pan for second batch. Cook 20 minutes, turning halfway through. Meanwhile, heat sauce over medium low heat. Remove meatballs and transfer to a paper towel lined plate.

 

Notes: This is a meatball and a bacon cheeseburger literally rolled into one. Dip in your favorite burger condiments. You could serve with a side of fries, or chips, and a nice kosher pickle. Serve on a dinner roll and make a delicious slider.
