Iron Chef-style Salmon Soup


Canned coconut milk and fresh mint are the surprise ingredients in this soup.



Ingredients:

  • 4 cups fish broth
  • 2 tsp. ground ginger
  • 8 oz. diced salmon
  • 2 tbsp.chopped fresh parsley
  • 2 tbsp. lemon juice
  • 1/2 to 1 tsp. seeded and minced fresh red chile pepper
  • 1 tsp. chopped fresh mint
  • 1 can coconut milk

Method

In a large soup pot combine all ingredients. Simmer for 20 minutes, stirring occasionally
