Italian Green Beans, Neapolitan Style

Green beans and clams are lightly seasoned with garlic and onions in this unusual vegetable side dish.
 

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1 medium yellow onion, thinly sliced
  • 1 clove garlic, minced
  • 1 4.5-ounce jar whole baby clams in their own juice
  • 1 10-ounce package frozen Italian-style green beans
  • 2 tablespoons water
  • 1/3 cup coarsely chopped walnuts, toasted
  • Dash salt
  • Dash white pepper

Method

Heat oil and butter in a small heavy saucepan over medium-low heat. Saute onion and garlic for 7 to 10 minutes or until soft and caramelized. Drain the clams, reserving juices in a medium saucepan. Add frozen green beans and water to saucepan. Cover and cook to desired doneness. Remove saucepan from heat and stir in clams, cooked onion mixture, and nuts. Cover and heat through. If desired, season to taste with salt and white pepper.

 

Notes: This recipe is inspired from my school days. One of our neighbors was a friendly lady from Naples who used to combine seafood with pasta, vegetables, and many other things. I added the walnuts to this recipe because they add a crunchy element to the dish.
