Italian Mozzarella and Tomato Dish

An easy, colorful side dish--buffalo mozzarella and grape tomatoes in a dressing of balsamic vinegar, olive oil, Dijon mustard and herbs.
 

Ingredients

  • 8 oz package buffalo mozzarella, packed in brine
  • 2 tbsp olive oil
  • 1.5 tbsp balsamic vinegar
  • Dash of salt and pepper
  • 2 crushed garlic cloves
  • 1 tsp herbs de Provence or dried basil
  • Fresh basil leaves chopped
  • 5 1/4 tsp Dijon mustard
  • 1 4 oz container grape or small cherry tomatoes

Method

Make dressing by blending mustard, vinegar, oil, seasoning and herbs. Add drained mozzarella balls and tomatoes. Add to a decorative earthen ware plate and serve as a side dish, salad or appetizer.

 

Notes: Add three basil leaves on top as garnish. Great with red wine and crusty French bread.
