Italian Mozzarella and Tomato Dish

An easy, colorful side dish--buffalo mozzarella and grape tomatoes in a dressing of balsamic vinegar, olive oil, Dijon mustard and herbs.Ingredients
- 8 oz package buffalo mozzarella, packed in brine
- 2 tbsp olive oil
- 1.5 tbsp balsamic vinegar
- Dash of salt and pepper
- 2 crushed garlic cloves
- 1 tsp herbs de Provence or dried basil
- Fresh basil leaves chopped
- 5 1/4 tsp Dijon mustard
- 1 4 oz container grape or small cherry tomatoes

Method
Make dressing by blending mustard, vinegar, oil, seasoning and herbs. Add drained mozzarella balls and tomatoes. Add to a decorative earthen ware plate and serve as a side dish, salad or appetizer.
Notes: Add three basil leaves on top as garnish. Great with red wine and crusty French bread.
