Italian Pasta Salad

You can vary the ingredients in this salad by substituting some sweet peppers or zucchini.
Ingredients
- 2 12-oz. boxes dried tri-color rotini pasta
- 8 oz. mild cheddar cheese, cut up
- 8 oz. mozzarella cheese, cut up
- 1/4 pound pepperoni, cut up
- 1/4 pound hard salami, cut up
- 1 large cucumber, peeled and finely chopped
- 4 roma tomatoes, cup up
- 1 small can sliced olives, drained
- 1 16 oz. bottle Italian salad dressing
- 1/2 tsp. garlic powder
- 1/4 cup grated Parmesean cheese

Method
Cook pasta according to package directions; rinse and drain. In a large salad bowl combine pasta, cheddar cheese, mozzarella cheese, pepperoni, salami, cucumber, tomatoes, and olives. Combine salad dressing, garlic powder, and Parmesan cheese. Pour over pasta mixture; toss until combined. Cover and chill before serving.
Notes: If the pasta seems to get a little dry, just add a littlt olive oil and stir into salad.
