Italian Red Potato Salad

This creamy red potato salad gets an extra kick from Italian salad dressing, capers, horseradish and olives.
 

Ingredients

  • 5 large red potatoes
  • 1/2 cup sour cream
  • 1/4 cup mayonaise
  • 1/2 cup Italian salad dressing
  • 4 Tbsp capers
  • 2 Tbsp creamy horseradish
  • 1/4 cup minced onion
  • 1 cup diced celery
  • 1 16 oz can chopped black olives
  • Salt and pepper to taste

Method

Peel and cut potatoes in small chunks. Boil until cooked through but not mushy, you want potatoes to keep their shape. Drain potatoes and place in large bowl pour Italian dressing over potatoes. Stir and then cool completely. When cooled add remaining ingredients. Stir well and chill for one hour. Serve.

 

Notes: You may have to add more or less sour cream depending on the size of your potatoes.
