Italian Vegetable Bake

Make this easy side-dish when your garden is overflowing with tomatoes, zucchini, and summer squash.
 

Ingredients

  • 3 large ripe tomatoes, sliced
  • 3 small zuccini, sliced
  • 3 small yellow summer squash, sliced
  • 3 oz. sliced mushrooms
  • 1/3 cup grated Parmasan cheese
  • Fresh basil

Method

Layer tomatoes, zucchini, summer squash, mushrooms, Parmesan cheese, and basil in a 9x12-inch baking dish. Bake at 350 degrees for 40 minutes.

 

Notes: For a vegan alternative use vegan cheese. For a main dish alternative include 1 LB cooked and chunked chicken meat.
