Italian Sausage Fettuccini Alfredo Soup


Garnish each serving of this tasty soup with a little shredded Parmesan cheese.



Ingredients:

  • 1/4 cup sliced green onions
  • 2 cloves garlic, minced
  • 1 pound bulk sweet Italian sausage
  • 8 oz. sliced fresh mushrooms
  • 2 tbsp. all-purpose flour
  • 1 tsp. crushed fennel seeds
  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. minced fresh basil
  • Pinch cayenne pepper
  • 5 cups beef or chicken stock
  • 1 12-oz. package frozen precooked noodles
  • 1 cup whipping cream
  • 4 oz. cream cheese  
  • optional garnish: shredded Parmesan cheese, fresh basil leaves and/or sliced green onions

Method

In a large saucepan cook green onions, garlic, sausage, mushrooms, and fennel seeds in hot oil until sausage is done. Stir in flour, basil, and cayenne pepper. Add stock to saucepan. Bring to a boil. Reduce heat to low; cook for 5 minutes. Stir in noodles. Return to a boil. Stir in cream and cream cheese, heating just until cheese melts.
