Jalapeno Mint Pizza with Mascarpone Cheese

Jalapeno jelly, a fresh pepper and fresh mint are combined to form the sauce on this pizza. The chorizo and mascarpone really go well together.
 

Ingredients

  • 1 12-inch traditional crust or brick oven style crust
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons finely chopped green onions, green part only
  • Jalapeno spread:
  • 1/4 cup jalapeno jelly
  • 1 fresh jalapeno pepper, seeded and chopped
  • 2 tablespoons chopped mint leaves
  • 2 cups mascarpone cheese
  • Pizza toppings:
  • 5 ounces chorizo, pre-cooked, casing removed and very thinly sliced change
  • 1/2 small red onion, sliced thinly
  • 1/2 small sweet onion, sliced thinly

Method

Preheat oven to 425 degrees F. Spray pizza pans or baking sheet with extra virgin olive oil, put pizza crust on pan, whisk together the olive oil and green onions till blended, brush on pizza crust and set aside. In a small heavy saucepan, heat all the ingredients for jalapeno spread on medium heat until well blended. Set aside to cool for 10 minutes. Layer pizza crust as follows: brush on the jalapeno spread, evenly distribute the cheese, chorizo and the onion slices. Place in oven for 10 to 15 minutes or until heated through. Remove from oven, cut and serve.
