Jennie's Imitation Crab Salad

A blend of vegetables, cheese and imitation crab meat in a creamy dressing makes a satisfying main dish salad or spread for crackers.
Ingredients
- 2 12 oz pkgs imitation crab meat, finely diced
- 1/4 cup green pepper, finely diced
- 1 cup carrots, finely diced
- 3/4 cup celery, finely diced
- 1/2 cup bok choy; white part only, finely diced
- 1/2 cup red onion, finely diced
- 1/2 cup sweet or white onion, finely diced
- 1 cup Swiss, provolone, or muenster cheese, finely diced
- 1-2 cups salad dressing
- Salt and pepper to taste
- 1 tbsp bread and butter pickle juice

Method
Place vegetables in a large bowl to mix then stir in crab meat. Add salad dressing, 1/2 cup at a time, until desired consistency is obtained. Add salt, pepper, and pickle juice to taste.
Notes: I have also used green olive juice and even bleu cheese dressing. You can wrap the mixture in lettuce leaves or warm tortillas, and serve on crackers. Play with the vegetables according to your family's preferences.
