KansasCity-Style BBQ Chicken Pizza

Top pizza crust with barbecue sauce and then with cooked chicken, cream cheese, and smoked cheese in this delicious version.
 

Ingredients

  • 1 recipe pizza dough, rolled to 14 inches
  • 1 pound skinless, boneless chicken thighs
  • 1 tablespoon canola oil
  • 1 teaspoon salt
  • 1 teaspoon packed brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
  • 2/3 cup KC Masterpiece BBQ Sauce(or your favorite)
  • 1 3-oz. pkg. cream cheese, cut into 1/2-inch cubes
  • 1-4 oz. can diced green chiles, drained
  • 2 cups shredded smoked cheddar cheese (8 ounces)

Method

Preheat oven to 425 degrees. Line a greased pizza pan with dough. Prebake pizza crust 5 to 7 minutes or just until set. Meanwhile, preheat indoor or outdoor grill pan. In resealable plastic bag, place chicken, oil, salt, brown sugar, cumin, and black pepper. Gently knead the bag to coat chicken evenly. Grill 3-5 minutes per side or until done (180 degrees). Let rest 5 minutes before cutting into 1-inch cubes. Spread pizza crust with barbecue sauce. Top with cream cheese, green chiles, chicken and cheddar. Bake additional 15 minutes or until crust is golden and cheese is melted.

 

Notes: This is a hometown favorite...great anytime of the year, but especially good during football season!
