Kicked Up Catfish

A healthy, simple way to prepare catfish--just brush with butter and seasonings, then bake 25-30 minutes.
Ingredients
- 4 catfish filets
- 4 tbsp butter
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 1/4 tsp cayenne pepper
- 1 1/2 tsp paprika
- 1 tsp basil
- 1 tsp oregano
- 1/2 tsp garam masala

Method
Preheat oven to 350 degrees. Melt butter in a small saucepan and set aside. Pat catfish filets dry. Lay catfish on top of metal cooling racks placed inside quarter sheet pans. Combine all dry ingredients in a bowl and mix until well combined. Brush one side of each filet with butter and sprinkle with seasoning mixture liberally. Turn over each filet and repeat. Bake 25-30 minutes, depending on the thickness of filets. Serve hot.
Notes: This is wonderful served with a nice tartar sauce.
