Kim R's Super Delicious Spinach Lasagna

A healthy, low-fat pasta dish with spinach, feta and cream cheese, and whole wheat pasta.
Ingredients
- 10 oz fresh spinach
- 8 oz reduced fat feta chunk cheese
- 16 oz reduced fat cream cheese
- 2 oz chives
- 2 oz pine nuts
- 1 box whole wheat rotini pasta
- 1 jar spaghetti sauce, with garlic
- 2 cups mozzarella/Parmesan cheese blend

Method
In a food processor, chop fresh spinach. Transfer chopped spinach to a large mixing bowl. Chop feta cheese in food processor. Transfer chopped feta to mixing bowl. Add cream cheese to feta and spinach, then mix well with a hand mixer. Add chives and walnuts, then mix again. Prepare whole box of pasta following directions for firm pasta. Heat spinach mixture on low on stovetop. Do not heat until boiling, just until mixture is warm and more pliable. Add pasta and mix until evenly coated. In a 9 x 13 glass baking dish, pour a thin layer of spaghetti sauce. Put spinach dip and pasta mixture in dish on top of sauce and pat down. Pour remainder of pasta sauce on top of spinach pasta mixture. Top with 2 cups cheese mixture. Bake at 375 degrees until cheese is browned.
Notes: Adjust the amount of feta cheese and chives to taste.
