King Ranch Chicken Soup

A super easy chicken soup with tomatoes, chiles, and olives; with a creamy cheesy broth.
Ingredients
- 1 can Chicken Stock (a little larger than a soup can)
- 1 can Cream of Mushroom Soup
- 1 can Cream of Chicken Soup
- 1 can Cream of Celery Soup
- 1 can Diced Tomatoes (a little larger than a soup can) - with juice
- 1 can Diced Green Chilis (small can) - drained
- 1 to 1 1/2 lb Velvetta cheese - cubed
- 1 can Sliced Black Olives (small can) - drained
- Meat from one Boiled Chicken (aprox 3 to 4 lb precooked weight)

Method
Combine all ingredients in crock pot and cook on low for at least 3 hours. Stir occasionally if possible to help melt the cheese. Stir well before serving. Serve over rice, tortilla chips or Fritos if desired. (Also good as just a thick soup.)
Notes: You can substitue rotel tomatoes for the diced tomatoes and the chilis if desires.
