Land Rush Soup

Bulk sausage and onion are cooked and combined with canned tomatoes, white corn, black beans, green chilies, barley and chicken broth to make this soup.
 

Ingredients

  • 1 Pkg. of Breakfast Sausage
  • 1/2 cup of onion
  • 1 Can of Black Beans, rinsed and drained
  • 1 Can of diced Tomatoes with its liquid
  • 1 can of White whole kernel corn, drained
  • 1 can of green chilies
  • 2 cans (14 oz. each) of chicken broth
  • 1 cup of cooked barley

Method

Cook sausage and onion together until done; drain off fat. Meanwhile, mix all other ingredients (except barley) in a large pot. Bring to boil; reduce to simmer, add cooked sausage and onion to pot; let simmer about 30 minutes. Add cooked barley and simmer about 10 minutes more.
