Sliced leeks are cooked with mushrooms and cubes of acorn squash in butter until tender.
Peel off outer layer of leeks, rinse well, and cut into 1/4 inch slices. Rinse mushrooms.
Cut Acorn Squash in half, clean out seeds, and microwave (in baking dish, cut side down) for 8 minutes. Cool enough to handle. Cut off outer layer of squash, then cut pulp into bite size pieces.
Melt butter in frying pan, then add leeks, mushrooms and squash to butter; saute until tender. Add salt and pepper to taste.
Notes:
Serve as a side dish with any meat. This has a taste like none other. It compliments most meat dishes and is wonderful.
