Lemony Pasta Fresca


This pasta side dish is full of lemon flavor. Add crushed red pepper for extra zip.



Ingredients:

  • 1 pound penne or other tube shaped pasta  
  • 4 cups brocolli flowerets  
  • 2 cloves garlic, minced  
  • 1 can (14 oz) chicken broth  
  • 2 tbsp fresh lemon juice  
  • 2 tbsp grated lemon peel  
  • 3 tbsp grated parmesan cheese (optional)  
  • 1/4 tsp crushed hot red pepper flakes

Method

Cook pasta according to package directions, but do not add salt. Drain. While pasta is cooking, spray a large non-stick skillet with vegetable cooking spray. Heat skillet over medium heat. Add broccoli and garlic. Cook stirring frequently for 2 minutes. Add broth, lemon juice, and lemon peel to skillet. Bring mixture to a boil. Cook until broccoli is crisp-tender, about 5 minutes. Add pasta, parmesan and red pepper flakes to skillet. Cook, stirring, until heated through, about 5 minutes. Divide pasta mixture among individual serving plates. Serve immediately.
