Loaded Chicken Breast

Bacon, green onion and cheese add flavor to baked chicken in this simple, delicious dish.
Ingredients
- 6 boneless skinless chicken breasts
- Shredded Monterey Jack cheese
- Green onion
- Bacon or bacon crumbles
- Olive oil or cooking spray
- Salt and pepper if desired

Clean and wash chicken breasts. Coat a 13 X 9 baking pan with olive oil cooking spray. Bake chicken at 350 degrees about 1 hour and 10 minutes, or until done. Remove from oven and poke holes in breasts with a fork. Crumble bacon and place a thin layer on top of each breast. Place a thin layer of shredded cheese on top of bacon. Add chopped green onion on top of cheese. Return to oven for 15 minutes or until cheeses is melted. Salt and pepper, if desired.
Notes: Bacon adds sodium so really not necessary to add any salt.
