|2||Whole Lobster Tails, thawed|
Preheat broiler to 425 degrees. Using kitchen shears, cut through center of shell from top to bottom. Using a thumb, pull meat from shell, making sure to get pink top separated from shell. Work fingers all the way around meat to release from shell, top and bottom. Pull tail meat up and place on top of shell. The shell works as it's own broiler pan. The meat should be still connected at very bottom to tail. Melt half of butter in microwave about 30 seconds, and add juice of 1/2 lemon, or to taste. Place lobster tails on a cookie sheet and baste with lemon and butter mixture. Place in oven for 15 minutes, depending on the size of lobster tails. Melt remaining butter in two ramekins and place one on each serving plate for dipping.
The shell will turn red or bright pink when the tails are done. Insert a fork at a 45 degree angle and gently twist. If it is still translucent, it is not done. Color should be milky.
