Low-Fat Fettucine Alfredo

Cream cheese adds body and creaminess to this lower-fat Alfredo sauce. Toss with fettuccine pasta and serve with chicken and broccoli for a complete dinner.
Ingredients
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 tbsp all-purpose flour
- 1 1/2 cups fat-free milk
- 1 cup shredded Parmesan cheese
- 4 oz. reduced-fat cream cheese
- 1 box dry fettuccine pasta
- Salt and pepper to taste

Method
Melt butter in saucepan. Add garlic and cook for 1 minute. Stir in flour to make a paste. Stir in milk. Stir in Parmesan cheese. Add cream cheese. Cook until thick and creamy. Adjust milk as necessary. Season to taste with salt and pepper. Cook fettuccine noodles while making sauce. Drain noodles and add sauce. Sprinkle additional Parmesan cheese on top of each individual serving.
Notes: I make this dish once a week on nights when we need a fast dinner. I always have the ingredients on hand and I can make this dish from start to finish in 20 minutes (including time for water to boil for noodles). You can also add chunks of cooked chicken or broccoli.
