Marinated Two Bean Salad

This protein packed salad has green and yellow beans, the added crunch of celery and a vinegar and pickling spice marinade for a great sauce.
 

Ingredients

  • 1 16 oz can green beans
  • 1 16 oz can yellow beans
  • 2/3 cup vinegar
  • 1/3 cup water
  • 1 tsp mixed pickling spices
  • 1/4 cup sugar
  • 1/2 cup chopped celery

Method

Reserving 1/2 cup liquid, drain beans. Heat reserved bean liquid with vinegar, water and pickling spices. Boil 2-3 minutes, stir in sugar, then cool and strain. Add dressing to beans and celery. Cover and chill 6 hours or overnight, stirring occasionally.
