McHealthy Breakfast Sandwich

A healthy breakfast sandwich made with whole grain English muffins, American cheese, no meat sausage, and egg substitute.
Ingredients
- 1/4 cup egg substitute
- 1 whole grain English muffin
- 1 vegetarian sausage patty
- 1 slice reduced fat American cheese

Method
Split and toast English muffin. Wrap vegetarian sausage patty in damp paper towel and heat in microwave for about 30 seconds or until warm, but not overcooked. Prepare egg substitute omelet in small, non-stick pan coated with non-stick spray (i.e. Pam). When omelet is set to desired doneness, fold in half and then in quarters with spatula. Place omelet on toasted English muffin, add sausage patty, and then top with sliced American cheese. Allow cheese to melt slightly from heat of other components of warm sandwich. You can pop it in the microwave for a few seconds or wrap it waxed paper if it makes it seem more like the "McUnhealthy" version. Enjoy!
