Mediteranean Pizza

A mixture of Roma tomatoes, red onion, feta and mozzarella cheeses, and herbs is spooned onto individual Greek flat breads or pizza shells, and then baked.
Ingredients
- 3 Roma Tomatoes (remove seeds and pulp)
- 1/2 of a Red Onion
- 1 cup Feta Cheese - crumbled
- 1 cup Mozzarella Cheese - shredded
- 1 tbsp dried leaf Oregano
- 4-5 leaves Basil - Fresh Chopped
- 3 tbs. Pure Virgin Olive Oil
- Individual Greek Flat Bread or ready-made pizza shells

Finely chop roma tomatoes and red onion. Place in bowl; add crumbled feta cheese, shredded mozzarella cheese, basil, oregano and some of the olive oil. Mix gently. Brush the top of the flat bread or crust lightly with some olive oil. Spoon tomato mixture on the flat bread, spreading evenly to about 1/2-inch from the sides. Place flat bread on a baking sheet with holes to allow bottom of pizza shell to become crisp. Bake in 425 degree oven. Remove when cheese on top starts to bubble or when you see it is starting to crisp, about 10-12 minutes.
Notes: Serve as a main dish or, cut into triangle pieces and serve as appetizers with your favorite wine. For variation you can also use chopped baby mozzarella cheese -- very light and mild. Bon Appetito!!
