Grilled pita's with bacon, lettuce and tomato, plus feta and olives for a Mediterranean flair.
Fry bacon in skillet or bake on a cookie sheet until crisp.
Shred lettuce and slice or chop tomato,
pit olives and chop, shred cheese, crumble feta.
Heat olive oil in skillet and lightly brown pita bread. (Pita is very dry, this step will soften the bread.)
Assemble sandwiches:
Place one slice of pita on plate and add each ingredient.
Dress with your choice of dressing and top with another pita.
Notes:
This is a large sandwich using two slices of pita bread.
Hungry men or teenage boys can eat two.
I like to bake the bacon on a cookie sheet to produce consistent bacon in enough quantity to serve several people.
The slowest process is browning the pita. You could brush bread with olive oil and heat on another oven rack at the same time you are doing the bacon.
