Mexican Pasta Mix Up

This Mexican pasta dish is packed with plenty of flavor. Cream cheese adds great flavor and texture along with black beans, tortilla chips, olives and corn.
 

Ingredients

  • 1 can tomato sauce
  • 1 packet taco seasoning
  • 1 cup leftover chopped up chicken
  • 1/2 cup onion chopped
  • 2 cups shredded Mexican cheese
  • 1 bag shell pasta
  • 1 can black beans
  • 1 can corn
  • 1/4 cup cream cheese
  • 1 small can chopped olives
  • 1/4 cup crushed tortilla chips
  • 2 tbsp chicken broth
 
Method

Start water to boil for pasta and cook according to directions. Preheat oven to 350 degrees. Add chicken to pan with onion to saute. Add chicken broth, half of taco seasoning and tomato sauce. When warmed through, pour into baking dish. Strain and rinse black beans then place in same pan to warm. Add corn after draining. Pour into baking dish with other ingredients and mix well. Dot with cream cheese and mix well. Add drained pasta and remaining tomato sauce to mixture and stir until well incorporated. Add 1/2 of cheese and mix well. Crunch up tortilla chips over top and sprinkle with remaining cheese. Sprinkle olives on top, cover with foil and cook 15 minutes then remove foil. Cook for another 10 minutes.
