Mini Blazin Buffalo Three Cheese Chicken Melt

These mini buffalo burgers go above and beyond with the addition of bacon. They are full of flavor and easy to eat without the usual mess of wings.
Ingredients
- Meat mixture:
- 1 tablespoon olive oil, plus more for grilling
- 1 pound ground chicken
- 1/3 lb uncooked bacon, very finely chopped
- 2 teaspoons cajun seasoning
- 1 teaspoon grill seasoning
- 1 cup grated sharp cheddar cheese
- 1/4 cup blue cheese crumbles
- 2 garlic cloves, minced
- 1/4 cup bottled buffalo wing sauce, plus 1/2 cup
- 4-5 celery ribs
- 4 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- Sauce:
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon cajun seasoning
- 1/4 cup blue cheese crumbles
- Other:
- 4 slices deli pepper jack cheese
- 12-16 dinner rolls or miniature hamburger buns

Meat mixture: In a large bowl, mix chicken, bacon, cajun seasoning, grill seasoning, cheddar cheese, blue cheese, garlic, and buffalo wing sauce. Mix meat gently and form into small 2 X 1/3 inch patties and set aside. Using a mandolin or sharp knife, shave celery into very thin crescents. In a jar, mix olive oil, lemon juice, salt and pepper then shake until well emulsified. Just before assembling burger bites, dress celery with enough dressing to moisten. Sauce: In a small bowl, mix sour cream, mayonnaise, cheese crumbles and cajun seasoning then set aside. Other: Heat a nonstick skillet, over medium high heat, brush with olive oil. Cook burgers 2-3 minutes per side, until cooked through. Just before assembly, top patties with a piece of pepper jack cheese and cover, so cheese melts on top of burgers. Begin toasting buns, if desired, just before assembly. To assemble burger bites, place a patty on each roll, add a teaspoon or more of buffalo wing sauce. Place a few teaspoons of celery slaw on top, or serve on the side if desired. Slather a few teaspoons of blue cheese sauce on each bun top and serve immediately.
