Mini Crobatta Pesto Steak Sandwiches

Thin slices of seasoned round steak layered with plenty of cheese and veggies on crisp bread--a hearty snack or dinner.
 

Ingredients

  • 1 lb thinly sliced top round steak; trimmed, pounded, and cut into thin strips
  • 2 tbsp lime juice
  • 2 tsp garlic powder
  • 1 tsp white pepper
  • 1 1/2 tbsp garlic basil sun-dried tomato pesto
  • 3 tbsp cream cheese
  • 2 tbsp chopped cilantro
  • 1/2 tsp lime juice
  • 1/2 cup chopped red and white onion
  • 1/2 cup chopped red and green pepper
  • 1/2 tsp cilantro
  • 1/2 tsp sea salt
  • 6 crobatta bread squares slice in half
  • 1 cup mozzarella and provolone shredded cheese mix
  • 1 tbsp shredded Romano cheese
  • Sprinkles of Parmesan
 
Method

Place meat in a bowl and add lime juice, garlic powder and white pepper, then mix and set aside. In a bowl, mix pesto, cream cheese, 2 tbsp cilantro and lime juice, then stir until smooth. Spread over halved crobatta bread slices. Sprinkle with Romano and Parmesan cheeses. Add a tbsp olive oil to a hot fry pan and add steak strips. Add onion and peppers with 1/2 tsp cilantro and 1/2 tsp sea salt. Brown until onions are caramelized, about 5 minutes. Arrange beef strips and vegetables evenly onto cheese covered bread. Sprinkle again with Romano and Parmesan cheese. Cover sandwiches with mozzarella and provolone cheese and broil until cheese melts and turns slightly brown. Serve with dips or salad dressings to drizzle over top or for dipping.

 

Notes: This recipe was created in a cooking creative night at my roommate's mom's house. She provided all the ingredients and I went to town creating a masterpiece. It was our fun fest and I am proud of my recipe as we all consumed it immediately with rave reviews.
