Mom's Squash Casserole
Mashed, cooked yellow summer squash is combined with beaten eggs, American cheese, cornbread crumbs, onion and green pepper, then poured into a loaf dish. It's baked with more cheese and cornbread crumbs on top.
Ingredients
- 2 1/2 cups cooked, mashed yellow crookneck squash
- 2 eggs, beaten
- 1 cup shredded American cheese, divided
- 1 cup cornbread crumbs, divided
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 2 tablespoons margarine
- 3/4 tsp. salt
- 1/4 tsp. pepper

Mix squash, eggs, 1/2 cup of the cheese, 1/2 cup of the cornbread crumbs, the onion, green pepper, margarine, salt and pepper. Pour into buttered loaf-style baking dish. Cover with 1/2 cup cornbread crumbs and 1/2 cup cheese that have been tossed together. Bake in 300 degree oven until top is crisp and light brown, about 30 minutes.
