Nana's Kielbasa and Sauerkraut Borscht


This healthy soup is loaded with vegetables and very little fat.



Ingredients:

  • 2 Tablespoon olive oil
  • 2 garlic cloves
  • 1 small onion, thinly sliced
  • 1 jalapeno pepper, stem removed and sliced 1/4"
  • 1 lb regular or turkey kielbasa, cut into 1" pieces
  • 1 red apple, diced (leave peel on)
  • 2 cups sauerkraut, drained & coarsely chopped
  • 1 cup red potatoes, diced (peel on)
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cups coarsely chopped fresh Swiss chard or spinach
  • 1 quart low-sodium chicken broth
  • pinch sugar
  • Salt and pepper to taste

Method

In a dutch oven or heavy 3-4 qt pot, heat olive oil over medium heat and saute garlic and onion until onion becomes transluscent, about 5-7 minutes, stirring frequently. Add jalapeno and sausage and brown for 3-5 minutes. Add rest of ingredients and simmer for 30-45 minutes or until potatoes are tender.

Notes: My Nana was from Lithuania and loved fixing borscht. She believed sauerkraut was good for the digestion. She always put a pinch of sugar in this dish. She said it was to have a sweet life. I added the Jalapeno for a little extra zip. This one is for you, Nana!
