This healthy soup is loaded with vegetables and very little fat.
In a dutch oven or heavy 3-4 qt pot, heat olive oil over medium heat and saute garlic and onion until onion becomes transluscent, about 5-7 minutes, stirring frequently.
Add jalapeno and sausage and brown for 3-5 minutes.
Add rest of ingredients and simmer for 30-45 minutes or until potatoes are tender.

She believed sauerkraut was good for the digestion.
She always put a pinch of sugar in this dish.
