Next Day Turkey Pot Pie

This pot pie recipe contains turkey (or chicken), spinach, onion, carrots, celery, and cream of chicken soup. The crust, made with self-rising flour and parmesan cheese, is simply poured on top.
Ingredients
- Filling:
- 1 medium onion, chopped
- 1 cup thinly sliced carrots
- 1 cup thinly sliced celery
- 1 tbls. butter
- 1 (9 oz) pkg. frozen chopped spinach, thawed & well drained
- 3 1/2 cups chopped, cooked turkey (or chicken)
- 2 (10 3/4 oz.) cans cream of chicken soup, undiluted
- 1 cup milk
- 1/4 tsp black pepper
- CRUST:
- 1-1/2 Cups self-rising flour
- 1/4 cup Parmesan cheese
- 1-1/2 cups milk
- 1/2 cup butter or margarine, melted

Pre-heat oven to 400. Grease shallow 3-quart rectangular baking dish. In large skillet, cook onion, carrots and celery in butter until tender. Stir in spinach. Pour mixture into baking dish. Top with turkey, distributing evenly. In medium bowl, combine soup, milk and pepper; pour over turkey mixture. In medium bowl, combine crust ingredients; stir until smooth. Pour over ingredients in baking dish. Bake at 400 for 45-50 minutes or until golden brown.
