Ingredients:
| 1 | (5 Lb) Roasting Chicken Cut Up, for frying |
| 3 tb | Chicken Fat or Shortening |
| 1 clove | Garlic, crushed |
| 2 stalks | Celery, sliced |
| 2 | Sprigs Parsley, chopped |
| ½ tsp | Thyme |
| 1½ tsp | Salt |
| ⅛ tsp | Pepper |
| dash | Cayenne Pepper |
| 1 qt | Water |
| 1 cup | Uncooked White Rice |
Directions:
Wash chicken and wipe dry. Using a Dutch oven, brown pieces until golden brown in chicken fat or shortening. Add garlic, celery, parsley, herbs, seasonings, and water; cover and simmer for 1 hour until chicken is tender. Lift pieces out of the broth. Remove bones (or leave bones on) and put chicken back into broth. Bring to a boil; add rice and simmer, covered until rice is tender.
