Onion Apple Soup with Gruyere Cheese

A nice mix of sweet, savory, and spicy. This soup is topped with Gruyere cheese.
Ingredients
- 3 cup beef broth
- 2 cup apple cider
- 1/4-1/2 cup dry sherry
- 1/4 tsp white pepper
- 1 tbsp soy sauce
- 1/4 tsp red pepper flakes
- 1 bay leaf
- 3 Tbsp butter
- 1/2 cup tart apples, peeled, cored and thinly sliced
- 3 cloves garlic, finely sliced
- 2 cup white onion, thinly sliced
- 1 cup Gruyere cheese, grated

Method
In a large pot combine broth, cider, sherry, white pepper, soy sauce, red pepper flakes and bay leaf and bring to a boil. Reduce heat and let simmer for 30 minutes. In a large skillet melt butter, then saute apples, garlic and white onions until onions are brown. Add onion mixture to cider mixture. Let simmer for 1 hour. Ladle into bowls and top with cheese.
Notes: Apples are a wonderful compliment to onions.
