Ingredients:
| ½ cup | Orange Juice |
| 1 Tbsp | (unsalted) Butter |
| 1½ tsp | Brown Sugar |
| 1 tsp | Cornstarch |
| ½ tsp | Grated Orange Rind |
| ½ tsp | Prepared Horseradish |
| ½ tsp | Salt |
| ¼ tsp | Pepper |
| 4 cups sliced | Beets, cooked and drained |
Directions:
In a saucepan over medium-high heat, combine all ingredients except beets. Whisking constantly, bring mixture to a boil. Cook and stir until thickened and bubbly, about 1 minute. Reduce heat to medium. Stir in cooked beets to coat with sauce. Stir until beets are hot, then serve immediately.
Helpful Tips:
Beets may be prepared a day ahead and reheated.
