Sliced fresh beets are cooked, drained and coated with a slightly thickened glaze of orange juice & peel, brown sugar, butter and horseradish.

  • Servings: 6

½ cup Orange Juice
1 Tbsp (unsalted) Butter
1½ tsp Brown Sugar
1 tsp Cornstarch
½ tsp Grated Orange Rind
½ tsp Prepared Horseradish
½ tsp Salt
¼ tsp Pepper
4 cups sliced Beets, cooked and drained

In a saucepan over medium-high heat, combine all ingredients except beets. Whisking constantly, bring mixture to a boil. Cook and stir until thickened and bubbly, about 1 minute. Reduce heat to medium. Stir in cooked beets to coat with sauce. Stir until beets are hot, then serve immediately.
