|½ cup||Orange Juice|
|1 Tbsp||(unsalted) Butter|
|1½ tsp||Brown Sugar|
|½ tsp||Grated Orange Rind|
|½ tsp||Prepared Horseradish|
|4 cups sliced||Beets, cooked and drained|
In a saucepan over medium-high heat, combine all ingredients except beets. Whisking constantly, bring mixture to a boil. Cook and stir until thickened and bubbly, about 1 minute. Reduce heat to medium. Stir in cooked beets to coat with sauce. Stir until beets are hot, then serve immediately.
Beets may be prepared a day ahead and reheated.
