Orange-Ginger Carrots


Frozen carrots are cooked and drained to start this vegetable side dish. The carrots are then seasoned with a slightly thickened mixture of orange juice, brown sugar, ginger and butter.



Ingredients:

  • 1/2 bag frozen carrots  
  • 1 tbsp. granulated brown sugar  
  • 1 tsp. cornstarch  
  • 1 tsp. ginger  
  • 1/4 Cup orange juice  
  • 2 tbsp. butter, cut up

Method

Cook carrots according to package directions. Drain and transfer to serving dish. In a separate pan, combine sugar, cornstarch, ginger and a dash salt. Add orange juice. Cook until slightly thickened and bubbly; cook 1 minute more, stirring constantly. Remove from heat; stir in butter and pour over carrots.
