Oregano Chicken

Chicken legs and thighs are simmered in a beer and oregano mixture.
Ingredients
- 4 chicken legs
- 4 chicken thighs
- 2 tablespoons olive oil
- 4 potatoes, sliced 1/4- to 1/2-inch thick
- 1 large onion, sliced and separated into rings
- 1 cup beer
- 2 tablespoons dried oregano, crushed
- Salt
- Black pepper

Method
In a large skillet brown chicken in hot oil. Remove chicken from skillet, reserving drippings in skillet. Saute potato slices and onion rings in drippings. Return chicken to skillet. Combine beer and oregano; pour over chicken. Cover and simmer 45 to 60 minutes or until chicken is no longer pink. Season to taste with salt and pepper
Notes: This is one of the first SUCCESSFUL recipes I cooked when I got married. It's easy, filling, and nutritious.
