Orzo Spinach Pasta

This flavorful pasta side dish cooks pine nuts and garlic in butter until nuts are toasted, then adds wilted fresh spinach, cooked orzo pasta, and feta and parmesan cheeses.
Ingredients
- 1/2 cup orzo pasta
- 2 tbsp butter
- 1 tsp minced garlic
- 1/4 cup pine nuts
- 2 cups chopped fresh spinach
- 3 tbsp tomato & basil feta cheese, crumbled
- 1/4 cup finely shredded parmesan cheese

Cook orzo pasta and drain; set aside. In a large skillet heat butter, garlic and pine nuts on low heat until nuts are toasted--do not burn butter. Add spinach; cook until wilted. Add orzo pasta to skillet. Mix together. Add Feta & Parmesan; toss and serve.
Notes: Great as a side dish for fish, meat or chicken. This recipe from start to finish takes about 10 minutes, and kids love this dish.
