Ingredients:
| 2 cups | Leftover Mashed Potatoes |
| 2 | Eggs Yolks, beaten |
| ⅓ cup | All-purpose Flour |
| ¼ tsp | Baking Powder |
| ½ tsp | Seasoned Salt |
| ½ tsp | Onion Powder |
| 3 Tbsp | Plain Bread Crumbs |
| Butter Flavor Cooking Spray | |
Directions:
Heat oven to 375 degrees. Line a large baking sheet with parchment paper. Stir potatoes and egg yolks together in a medium bowl. In a small bowl, stir flour, baking powder, seasoned salt, and onion powder together. Stir into potato mixture. Divide into twelve mounds, 3-inches apart on parchment-lined baking sheet. Use a spoon to spread into 1/2-inch thick circles. Sprinkle tops lightly with bread crumbs, then spray with cooking spray. Bake for 20-30 minutes or until golden brown.
