Leftover mashed potatoes are put to good use with these oven baked potato pancakes. What a great addition to any spread with sour cream and applesauce.

2 cups Leftover Mashed Potatoes
2 Eggs Yolks, beaten
⅓ cup All-purpose Flour
¼ tsp Baking Powder
½ tsp Seasoned Salt
½ tsp Onion Powder
3 Tbsp Plain Bread Crumbs
Butter Flavor Cooking Spray


Heat oven to 375 degrees. Line a large baking sheet with parchment paper. Stir potatoes and egg yolks together in a medium bowl. In a small bowl, stir flour, baking powder, seasoned salt, and onion powder together. Stir into potato mixture. Divide into twelve mounds, 3-inches apart on parchment-lined baking sheet. Use a spoon to spread into 1/2-inch thick circles. Sprinkle tops lightly with bread crumbs, then spray with cooking spray. Bake for 20-30 minutes or until golden brown.
