Pasta and Beans

Linguini pasta in a smooth sauce made with white beans and fresh pumpkin.
 

Ingredients

  • 2 cans white beans, drained and rinsed
  • 2 cups pumpkin, diced
  • 1/2 onion, chopped
  • 3 cloves garlic, chopped
  • 3 cubes beef bouillon
  • 6 cups water
  • 1/4 box linguini pasta cut in half
  • 1/4 cup flour
  • Olive oil
  • 1/4 cup olive oil or butter
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt

Method

In a medium sauce pan heat a small amount of olive oil on high heat; saute the onion and garlic until light brown. Add the oregano and paprika, and let it cook for 1 minute, stirring occasionally. Dissolve beef bouillon cubes in a cup of water, and then add it to the sauce pan with the remaining 5 cups of water. Then add pumpkin. Meanwhile, in a small sauce pan over low heat, make a roux by mixing 1/4 cup olive oil or butter, and 1/4 cup flour. Stir this mixture until it turns the color of peanuts, light brown. When the water in the large sauce pan starts to boil, add the roux. Cook pumpkin mixture for 10 minutes. Then add pasta and beans. Let water boil for 10 more minutes or the amount of time required to cook pasta as shown in the pasta cooking instructions. Stir occasionally so the pasta doesn't stick to the pan. Once the food is all cooked, add salt to taste. Stir vigorously so some of the pumpkin dissolves, and the food becomes sweet and creamy, then serve.
