Pasta Fagloli

This pasta dish can be used as a great addition to any meal but is surely hearty enough to serve as a main dish.
 

Ingredients

  • Prosciutto
  • Onions, finely chopped
  • Carrots, grated
  • Celery
  • Garlic, grated
  • Flour
  • Chicken broth
  • Tomato paste
  • 1 large can cannellini beans
  • White navy beans
  • Chickpeas (garbanzo beans)
  • Salt and pepper
  • Olive oil
  • Grated cheese garnish, Romano or Reggiano
  • Small shell macaroni

Method

The amount of each ingredient used will depend upon the number of people you wish to serve. Chop prosciutto and lightly brown in olive oil. Add onion, carrots and celery. Cook until sweated. Add garlic and stir, add flour and stir, cooking slightly more. Raise heat, add chicken broth and bring to boil while stirring. Add tomato paste enough just to tint. Color should be pale. Salt and pepper to taste. Mash cannellini beans, and then add all beans. In a separate pot cook macaroni. When pasta is done add to beans along with a little pasta water. Serve hot topped with a sprinkle of grated cheese.
