Pasta Waldorf Salad

Cooked macaroni makes this Waldorf Salad different from the usual. Shell pasta is combined with red and green apples, red or green grapes, celery, pecans, and (optional) dried cherries, plus mayonnaise to moisten.
Ingredients
- 1 12 oz. medium shell macaroni
- 2/3 Cup chopped pecans (toasted, if you like)
- 1 large Green Granny Smith apple
- 1 large Red Delicious Apple
- 2 Tbs. lemon juice
- 1 Cup celery (or more, if you like)
- 2/3 cup dried red cherries (optional)
- 1 1/2 cups red or green seedless grapes, halved
- 1 tbsp. sugar
- Salt and pepper to taste
- 16 oz. Mayonnaise or salad dressing

Cook shell macaroni according to package directions, to your desired doneness. If toasting pecans, preheat oven to 350 degrees. Spread nuts in single layer in shallow baking pan; bake a few minutes till golden brown. (Watch carefully.) Quarter apples, core, then cube. Do not peel. Toss apple in large bowl with the lemon juice. Add nuts, celery, cherries, grapes, sugar, salt and pepper; add pasta. Toss. Add enough of the mayonnaise to moisten.
Notes: Great for a make-ahead dish. Can refrigerate 2 to 24 hours without the apples discoloring.
