Penne Pasta with Sun Dried Tomatoes Fennel

A fast and easy pasta for your busy week nights--just saute the sun dried tomatoes and herbs and mix with cooked pasta.
Ingredients
- 16 ounces penne pasta
- Kosher salt
- 2 Tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 6 ounces sun dried tomatoes, cut into strips
- 2 teaspoons fennel seeds
- 2 Tablespoons pine nuts
- 4 green onions, finely chopped
- 2 Tablespoons fresh Italian parsley leaves, finely chopped
- 1/2 cup grated parmesan cheese
- salt
- Freshly ground black pepper

Method
Cook penne according to directions. Heat oil in 12 inch skillet over medium heat; saute garlic, sun dried tomatoes, fennel seeds, and pine nuts for 3-5 minutes, stirring occasionally. Add green onions and saute for another minute. When pasta is done, drain and add to mixture in skillet. Add in parsley and parmesan cheese and toss well. Season to taste with salt and pepper. Serve immediately in warm bowls.
